Start by crushing the ginger using a pestle and mortar to release its natural oils and flavor.
1- inch ginger
In a saucepan, bring 1 cup of water to a boil.

Add the crushed ginger, fresh turmeric slices, fennel seeds and cinnamon powder into the boiling water.

Let it all boil together for about 5 minutes, so the flavors can infuse.
Add several sprigs of fresh mint, letting it steep for a minute or so.

Strain the tea, then pour it into a cup.
1 tsp lemon, 1 teaspoon honey
Squeeze a thin slice of lemon into your tea, and stir in honey or maple syrup to taste.
Mix everything well and serve hot!
