Ingredients

  • 3 cups cubed watermelon
  • 2 cups sliced cucumber
  • 2 tablespoons lime juice
  • 1 Tablespoon extra virgin olive oil
  • 2 tablespoon mint leaves
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine cubed watermelon and sliced cucumber.
  • In a separate small bowl, whisk together extra virgin olive oil, lime juice.
  • Pour the dressing over the watermelon and cucumber mixture, and gently toss to coat.
