Paneer is a fresh Indian cheese (Indian cottage cheese). It does not melt and maintains it’s texture after cooking almost like a halloumi cheese.
Being mostly a vegetarian Punjabi family, I cook paneer several times in a week. Whenever I am in hurry, the Paneer bhurji makes a great breakfast or dinner for the obvious reasons, it is a tasty, quick and healthy recipe. Serve it with Roti, Paratha or even pav it tastes great anyway. I prefer it with the toast of my favorite Ragi bread or sometimes as a vegetarian version of bhurji pav.

Tips for making Authentic Punjabi Paneer Bhurji
- If you like it crisp then don’t stir it up for too long, let it cook on slow for few minutes and then stir it so that all water evaporates and you get a crispy texture in paneer bhurji.
- Don’t add too many spices, keeping it simple makes this Punjabi paneer bhurji just like it is made in homes or even in Dhaba. I am not talking about restaurants here, where sometimes too many spices end up killing the taste.
- Fresh Homemade Paneer is the key if you like the paneer soft and not the crispy because homemade paneer usually has more water content and keeps the paneer bhurji soft. This is the way we usually like to eat.
