Coffee jelly drink is the easiest way I turn strong coffee into a creamy, textured treat that feels like iced coffee and dessert in one glass. In this coffee jelly drink recipe, I set the coffee jelly directly in the serving glass, then pour sweet vanilla high protein milk over it.

Once it’s set, I grab a spoon and break it up so the coffee jelly cubes disperse through the milk like a jelly latte you can sip with a wide straw. ☕🧊

Most recipes set coffee jelly in a dish and cut cubes. I do it differently because it’s:

  • Less mess: no cutting board, no sticky jelly slab
  • Perfect portions: each glass is already built
  • More fun to drink: you break it up and the cubes form naturally

Ingredients for Coffee Jelly Drink + High Protein Vanilla Milk

Coffee jelly

  • 1 cup strong brewed coffee: hot and strong matters because milk dilutes it.
  • Sweetener for the jelly (optional) : 1 tsp monk fruit sweetener or Splenda, or 1 tbsp sugar

Setting agent: Choose one

  • Gelatin option: bouncy, best drink texture
    1 packet unflavored gelatin 2.5 tsp + 3 tbsp cold water
  • Agar agar for vegan option
    1.5 tsp agar agar powder (brand strength varies)

High protein vanilla milk

  • 1 cup high protein milk, cold either dairy or dairy free
  • Splenda or monk fruit sweetener, to taste
  • .5 tsp vanilla extract

Optional but highly recommended

  • Ice: if you want it extra cold and cafe like
  • Wide straw makes sipping the cubes easier

Gelatin vs Agar Agar Which One Should You Use?

Both work, but they feel different in a drink:

  • Gelatin: softer, bouncier, breaks into friendly pieces when you spoon cut it. This is my favorite for a coffee jelly drink because it disperses beautifully.
  • Agar agar: firmer, more clean cut bite, breaks into sharper pieces. Great if you want a more structured jelly.

How to Make Coffee Jelly Step by Step

Step 1: Brew strong coffee

  1. Brew 1 cups strong coffee. While it’s hot, stir in sweetener, keep it lightly sweet since the milk is sweetened.
  2. Add 3 tbsp cold water to a small bowl, Sprinkle gelatin over it and let it sit 2 minutes to bloom.
  3. Stir the bloomed gelatin into the hot coffee until fully dissolved.

Tip: Avoid boiling after gelatin is added. Too much heat can weaken the set.

Step 2B: If you are using Agar agar (vegan)

  1. Mix agar agar with 3 tablespoons of water
  2. Whisk agar agar into the hot coffee.
  3. Bring to a gentle boil and simmer  for 2 minutes, whisking.
  4. Remove from heat.

Step 3: Pour into glasses and chill

  1. Pour the brewed coffee and gelatin mixture in a glass.
  2. Cool for 15 minutes on the counter.
  3. Refrigerate for 2 hours, or until fully set.

How to Assemble the Coffee Jelly Latte

Step 1: Sweeten the high protein milk

In a jar or measuring jug, mix:

  • 2 cups cold high protein milk
  • Splenda or monk fruit (to taste)
  • .5 tsp vanilla extract

Stir or shake until dissolved.

Step 2: Pour milk over the set coffee jelly

Take the glasses out of the fridge and pour the vanilla milk directly on top.

Step 3: Spoon break and disperse the jelly in Milk drink

Use a spoon to cut and break the jelly in the glass. It will turn into little pieces coffee jelly cubes that swirl through the milk.

If you want it colder, add ice after you break up the jelly. Serve with a wide straw for the full coffee jelly drink experience.

Sugar free coffee jelly drink

Use monk fruit or Splenda for both the jelly and the milk. Keep the coffee strong so it still tastes bold.

Iced coffee jelly drink

If you want a stronger coffee hit, replace part of the milk with cold brew:

  • 1 cup milk + 1/2 cup cold brew
    This turns it into a more classic iced coffee jelly drink.

Mocha coffee jelly latte

Add 1 tbsp chocolate syrup (or cocoa + sweetener) into the milk before pouring.

Coffee jelly milk tea

Swap the milk for strong black tea + milk, or Thai tea + milk, then add coffee jelly and break it up. Coffee jelly milk teais creamy, fun, and very straw friendly.

Protein shake version

Use a ready to drink vanilla protein shake instead of milk. It becomes a high protein coffee jelly dessert drink that still feels like dessert.

Instructions

  • Heat 1 cup water and add espresso powder and monk fruit sweetener.
  • Brew 1 cup strong coffee.

  • Agar agar: Whisk agar into coffee, boil 1–2 minutes, remove from heat.
