This veg cheese grilled sandwich is easily one breakfast sandwich recipe that you can make on rushed mornings or a busy day. It’s super simple and easy to make.

You hardly need any special piece of equipment, because this Brown bread sandwich is made without grill, toaster, or oven. And in my book that makes it the Best breakfast sandwich recipe ever!

A simple veg sandwich for breakfast or evening snack for teatime. You can make it in 5 minutes if you have all the ingredients in the fridge. And 10 Minutes max is all it takes to make this delicious grilled veggie sandwich.

Ingredients for Making this 5 minutes Veg Sandwich

Vegetables: Corn and Bell peppers

Cheese : A good quality cheddar cheese or mozzarella. Or, May be a mix of both. 

Mayonnaise : Low fat homemade mayonnaise

Green chutney : It’s optional though or you can use your favorite sauce or bread spread.

Seasonings : Salt, mixed herbs , red chilli flakes.

How to Make Veg Cheesy Sandwich

5 minutes veg sandwich recipe

This recipe of sandwich does not require a sandwich maker, grill press or oven. I make it in a pan or skillet or even tawa/griddle.

I have used boiled corn, bell peppers/capsicum, cheese, yogurt and basic spices. You can make this grilled veggie sandwich recipe with mayonnaise or skip that as per your liking.

First of all making vegetable and cheese mixture, combine bell peppers, boiled corn, cheddar cheese, mayonnaise, salt, chilli flakes, mixed herb seasoning. [PHOTO 1,2,3,4]

On a brown bread slice, apply a thin layer of butter and green chutney. [PHOTO 5,6]

Now take the Vegetable cheese filling for the sandwich and place 2 spoons of stuffing on bread. [PHOTO 1,2]

Cover the bread with another slice of brown bread and place it on the skillet. Apply butter and cook it on medium-high heat till the sandwich is crispy on both the sides. [PHOTO 3,4]

When it becomes crisp cut each sandwich into 4 parts and serve [PHOTO 5,6]

Recipe Notes and Tips

  1. You can add your choice of veggies. If you do not want to use capsicum and use cabbage instead it is totally fine. You can add sliced tomatoes if you wish to.
  2. I made these sandwiches with brown bread, you can use any bread, multigrain, sour dough, white bread for making these veggie sandwich. Basically this sandwich spread works great with any bread of your choice.
  3. I used cheddar cheese which tastes great. However it’s your choice to totally skip cheese or use low fat, low calorie cheese  if you are looking for low calorie veg sandwich recipe.
  4. I have made it on tawa, but feel free to use toaster, grill, sandwich press or stove top sandwich maker to make this veggie sandwich.

Ingredients
  

  • 150 grams red capsicum chopped
  • 1/4 cup Boiled Corn
  • 4 tbsp hung curd/greek yogurt
  • 1 tsp mixed herbs
  • 1 tsp red chilli flakes
  • .5 tsp pink Salt
  • 1 tbsp mayonnaise
  • 75 grams cheese grated
  • coriander leaves chopped
  • 6 bread brown bread
  • 2 tsp butter

Instructions
 

  • Mix all the ingredients listed under sandwich filling recipe and combine them well to make sandwich spread.
  • To assemble the veg sandwich, spread butter on one side and on the other side spread the sandwich filling. Cover with another bread slice and prepare other sandwiches like this.
  • Now in a pan place the prepared sandwich from butter side outside and grill from the both the sides until crispy and golden brown.
