This instant pot vegetarian chili recipe is one of my most reliable weeknight dinners. It is thick, smoky, and full of flavor. It also feels like comfort food, but it still fits a healthy vegetarian routine.

- Do not stir
- Pressure cook

Ingredients for Vegetarian Chili
- Onion (chopped)
- Olive oil
- Carrots (small dice)
- Green bell pepper (chopped)
- Red bell peppers (chopped)
- Chopped tomato (fresh)
- Salt
- Red chili powder
- Chipotle peppers in adobo sauce (plus a little adobo sauce)

- Canned chopped tomatoes
- Cannellini beans (cooked or canned, drained and rinsed)
- Black beans (cooked or canned, drained and rinsed)

How to make Instant Pot vegetarian chili | Step by Step

Step 1: Saute the vegetables
Press Saute on Instant Pot. Add olive oil, Add chopped onion and cook 2 minutes. Add carrots, green bell pepper, and red bell peppers. Cook 3 to 4 minutes, stirring often. This step builds flavor. Do not rush it.
Step 2: Add spices
Start by adding salt, red chili powder, black pepper powder, chipotle peppers in adobo sauce (chopped) Cook for 20 to 30 seconds. Stir well.
Step 3: Deglaze (do not skip)
Add a small splash of water (or thin tomato juice from the can) and scrape the bottom well. You want the bottom smooth. This prevents burn notice.
Step 4: Add beans and fresh chopped tomato
Add Pinto beans and black beans. Stir gently. Add water
Step 5: Add canned chopped tomatoes (layer on top)
Pour the canned chopped tomatoes on top. Do not stir. This is one of the best Instant Pot chili tricks.
Step 6: Pressure cook
Close the lid and set valve to sealing. Pressure cook on High for 10 minutes.

Step 7: Release pressure the right way
For the vegetarian chili, I recommend: Timed natural release for 10 minutes, then quick release. This makes venting calmer. It also improves texture.

Step 8: Stir and adjust thickness
Open the lid. Stir well. If you want your vegetarian chilli thicker then press saute, simmer 5 to 8 minutes and stir occasionally.

If you want it thinner, add a small splash of water stir and warm
Step 9: Taste and adjust
Taste and adjust the salt, chili powder, black pepper. Add extra adobo sauce if you want more smoky heat. Finish with lime and toppings.
How to make this chili less spicy
Chipotle can be strong. To reduce heat in this chilli
- use only 1 chipotle pepper
- use less adobo sauce
- add more canned tomatoes
- add a splash of water while simmering
This makes it kids and family friendly.
How to make this chili more smoky
If you want more smoky flavor:
- add a little more adobo sauce
- add extra chipotle pepper
- simmer 2 to 3 minutes more after cooking
Chipotle is the main smoky ingredient here, so that is where you adjust.

Ingredients
- 1 tbsp olive oil
- 1 onion chopped
- 1 cup carrots diced
- 1 green bell pepper chopped
- 1 red bell peppers chopped
- 1 fresh tomato chopped
- 1 to 1½ tsp salt adjust to taste
- 1½ tsp red chili powder adjust
- 1 tsp oregano
- 1 chipotle peppers in adobo sauce chopped (plus 1 tbsp adobo sauce)
- 1 tsp black pepper powder
- 1/2 can chopped tomatoes
- 1 can Pinto beans drained and rinsed
- 1 can black beans drained and rinsed
- 6 tbsp cheese optional
- 1 oz tortilla chips
Instructions
- Select saute mode on instant pot. Add olive oil. Add onion. Cook 2 minutes.
- Add carrots and bell peppers. Saute 3 to 4 minutes.
- Add salt, chili powder, oregano, black pepper, and chipotle peppers. Stir 20 to 30 seconds.
- Deglaze with a splash of water and scrape bottom smooth.
- Add chopped fresh tomato and both pinto beans and black beans. Stir.
- Pour canned chopped tomatoes on top. Do not stir.
- Pressure cook High 10 minutes.
- Timed natural release 10 minutes, then quick release.
- Stir. Simmer on Saute 5 to 8 minutes if needed. Taste and adjust.
