    Best Matar Chaat

    Matar Chaat made with white peas tossed with roasted peanuts, onion, tomatoes, spices. A delicious street style chaat recipe made with dry yellow whole peas. Also known as Safed Vatana.

    Matar Chaat

    There are many varieties when it comes to matar chaat. Delhi style matar chaat is known as Matra and has a semi dry consistency.

    A UP style green preparation is known as matar ki ghugni and this matar chaat which is a delicious mix of boiled peas with crunchy onions and tomatoes coated with spices and tangy lime juice. This matar ki chaat is  mostly consumed as snack or appetiser. 

    In India we have two types of peas. Most common are fresh, green peas which I use to make Matar paratha, Matar Ka Nimona, Matar paneer, Punjabi Matar Paneer, Aloo Matar,  and many more recipes. There is another variety of white peas or safed Vatana which are mostly used in Chaat preparations.

    I make Matar chaat with dried white peas. This is so good in taste and healthy to the core. I highly recommend you guys should also give this a try. Bonus point is this is super easy recipe to make. When I am making this I use either Instant pot or regular pressure cooker to boil the peas. You can use these safed matar in making this Delhi style Matra Recipe as well as Mumbai Style Ragda pattice.

    Ingredients for Matar Chaat

    Dried white peas/safed Matar: These are white pea variety which are dried and stored. Mostly used to make curry or chaat in India. These are also known as safed matar or Vatana.

    Peanuts: You can use raw shelled peanuts or roasted peanuts. If you are using roasted peanuts you will save one extra step of roasting them and recipe time gets shorter.

    Fresh: Onion, tomatoes, green chillies, lime juice coriander leaves for garnish.

    Spices and Seasonings: Salt, red chilli powder, freshly roasted cumin powder, kala namak( black salt), chaat masala powder.

    Method Step by Step

    Cooking White Peas

    Soak 1 cup dried white peas/ vatana or (safed matar) in water for overnight or minimum 6 hours. After that rinse the soaked peas and  discard the water.

    Now transfer the soaked peas into pressure cooker add enough water to submerge the peas in water. Add salt and pressure cook for 2 whistles.

    If you are cooking peas in the Instant pot transfer the soaked peas into inner steel pot of your Instant Pot.  Add 1.5 cups (12 oz) water, salt and cook on pressure cook mode. Cook  for 15 minutes. Make sure to set the valve on sealing position.

    After opening the instant pot or pressure cooker(after releasing the pressure) open the lid and strain the peas. You want dry cooked peas for this chaat. Allow these peas to cool down.

    Roasting the Peanuts

    I have used raw peanuts so on slow to medium heat I roast peanuts. While roasting peanuts make sure that heat is low and keep it stirring. We want to use roasted peanuts and not the burned ones. After roasting With a spatula press on the peanuts so as to remove the skins. And then blow away the skin. It is a messy step so if you want to use pre roasted peanuts that is a better idea.

    Making Matar Chaat

    Transfer the peas into to a large bowl and then add to it- chopped onion, chopped tomato, red chili powder,, chopped cilantro, cumin powder, kala namak, chaat masala and a good squeeze of fresh lime juice.

    Toss them well and enjoy this healthy delicious , no oil chaat for snack or a light meal.

    Recipe Notes : Tried and Tested Tips 

    While pressure cooking peas make sure they retain their shape we do not want mushy peas for this chaat. If that happens I suggest you make this recipe of Matar Chaat.

    You can use canned white peas for this but make sure to rinse them before and take care while adding salt.

    You can pre-boil the peas and store in the fridge so that you can make this chaat in minutes.

    How to store the Chaat?

    Best method to store the chaat is to boil the white peas and keep them in the fridge. Chop the tomatoes and you can keep them in fridge. Onions need to be freshly cut for this.

    Do not premix the ingredients because salt will make chopped onions and tomatoes go limp. When you are ready to eat just toss all ingredients together and enjoy this lip smacking delicious Matar chaat in minutes.
