This quick pasta recipe is made with a mix of four kinds of cheese and super simple pasta dish to make at home. One word of caution though (DO NOT think about calories or count them even :D)

Often times we crave restaurant-style dishes but do not want to visit restaurants, for those times these restaurant-style recipes you can easily create in the comfort of your own homes come quite handy. 

Today I am showing you a recipe which is super easy to make and my family loves it a lot still I hardly made it at home because it involved using 4 variety of exotic cheeses and with a cheese-loving family like mine, it hardly happens in my home that all four kinds of cheese were there. 

The other day I found this Go cheese four cheese blend that solved the problem instantly because it is a blend of 4 cheese which can be used in creating restaurant classics like four cheese pizza or innovative dishes like our very own 4 cheese paratha.

This Four Cheese Pasta Recipe is

  • Easy to make. 
  • Very few and easy ingredients required. you can find most ingredients in any pantry.
  • You can use a store-bought 4 cheese blend as I did.
  • You can make your own four cheese blend as per your taste.
  • The white cheese sauce is thick and it is so versatile that you can use it in any type of pasta.

Ingredients Required

You need very few easily available ingredients to make this white sauce pasta dish. 

Pasta: Spaghetti, fusilli, penne or any other pasta. 

For Roux: You can use Butter or Olive oil or a mix of both to make this white cheese sauce. But personally I like to use only butter. All Purpose flour and milk.

Herbs & Seasoning: garlic, parsley, Mixed Italian seasoning, black pepper and salt

For making Cheese sauce: full fat Cream and a mix of cheeses.

Four Cheese Sauce 

This Italian style four-cheese sauce is made using four variety of cheeses. Has a creamy texture and packed with the flavour of garlic and herbs. In this post, I am talking about various cheeses you can use to make this white cheese sauce. Also, which type of pasta works better in this white sauce. 

What Cheeses to Use for White Sauce in Four Cheese pasta?

Four Cheese (Quattro formaggi) is a mix of any four types of cheeses. Usually it is provolone, cheddar, pecorino cheese, asiago, gruyere or fontina etc. But make sure they are all similar types. For white sauce pasta, a mix of hard or aged cheeses works fine.

Which Type of Pasta to Use?

You can use any pasta shape because white cheese sauce is thick and it sticks on any pasta shape. Penne, farfalle, shells gnocchi or spaghetti all work well with this four-cheese sauce.

How to Make Thick Cheese Sauce?

Milk and Roux form the base of this white cheese sauce. Making Roux is a simple process which I have shared in the steps below.

How to Make Roux for White Sauce?

A roux is a slow-roasted mixture of fat and flour. All-purpose flour is slowly roasted in the butter to a consistency of the wet and lumpy sandy mixture. Then you add the milk slowly while whisking it and a smooth and silky white sauce is formed.

For making White cream pasta sauce you add cheese or a mix of cheeses as per your choice and a silky smooth white cheese sauce is ready to be used.

How to Serve

You can serve this Cheese pasta dish on its own or as a side. It tastes great any which way. I serve it alongside some protein dish like Mushroom, chicken or paneer or pair it with Salads of your choice. Four Cheese White Sauce Past.

Storing Leftovers 

Store leftover Four cheese pasta in an airtight freezer safe container. It lasts in freezer for upto 3 days. 

Freezing

You can freeze this white sauce pasta easily in a freezer safe glass dish or in ziplock bags after cooling it. Now that work from home is over and back to offices has begun you can freeze this cheesy white sauce pasta in individual portions and bring to work for lunch. It stays in the freezer for 2 months.

Equipment

  • Non-Stick Pan (US)

Ingredients
  

  • 200 grams fusilli pasta
  • 2 tablespoons unsalted butter
  • 1/2 tsp garlic
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/4 cup cream
  • 1.5 teaspoons Italian seasoning
  • 1 cup Four Cheese blend Go Cheese

Instructions
 

  • 1 teaspoon black pepper
  • 1 tablespoon parsley leaves (chopped)
  • 1 tablespoon chopped basil leaves
  • In a large pot boil water and add salt.
  • Add pasta and cook it till al dente.
  • Drain pasta and reserve 1/2 cup of water.
  • To make four-cheese sauce heat butter in a pan add garlic and cook it for 1 min. Add in the all-purpose flour and cook on slow heat until very lightly browned (1 minute)
  • Switch off the heat and whisk in milk, cream and Italian seasoning.
  • Switch on the heat add 1/2cup of pasta water. keep it whisking till the sauce starts to thicken.
  • Add in Go four-cheese blend and cook the sauce till slightly thickened.
  • Now adjust salt as per taste and add black pepper.
  • Add cooked pasta and gently combine to coat it well with this four-cheese sauce.
  • Serve it in a bowl garnish with herbs and enjoy this delicious restaurant-style four cheese pasta cooked inconvenience of your home.
