    Best egg salad recipe if you are looking for a lite and easy egg salad.  Simple and easy egg recipe for dinner, lunch or breakfast. This Keto egg salad is perfect even if you are bothered with classic egg salad calories.

    All you need is hard-boiled eggs, avocado, and mayonnaise, to make this keto egg salad that is low carb, creamy, and delicious.

    How to Make Egg Salad - Video

    Classic egg salad is very popular and a delicious egg recipe. But that comes loaded with fats and some carbs. This keto egg salad recipe with avocado and mayonnaise is perfect 20 minutes egg recipe for dinner.

    If you are following a low carb or Keto diet this skinny egg salad is under 300 calories and tastes pretty awesome. To keep the net carb low I have not added any veggie even for crunch. If you are not really into counting carbs you can add chopped celery or red onion. 

    Also, I made wraps with iceberg lettuce. You can even use this egg salad to top up your keto bread if you wish to. If you are planning on a low carb diet then you can make this egg salad with avocado a regular egg recipe in your diet. 

    Egg Salad with Avocado

    Egg salad with avocado is tasty, low carb and a perfect keto recipe. If you are following LCHF diet adding avocado is a great idea because avo is high in good fats to make a healthier keto recipe. 

    Even if you are not following a keto diet, pile this egg salad on a toast or make egg salad sandwich with brown or multigrain bread.

    But I prefer to make make a lettuce wrap and this makes a delicious lunch box recipe to carry to work. This egg recipe is what I like to make when I have both calories and taste in mind. It is wholesome, nutritious and well balanced. 

    Ingredients for Egg Salad 

    This is the easiest egg salad recipe where you can use up your leftover hard-boiled eggs. I have added avocado, mayonnaise, dijon mustard, and chopped boiled eggs. Avocado, with its umami flavor, gives a buttery texture to the salad. I like to make a classic egg salad like this. 

    If you like you can vegetables like red onions, celery, or carrots. You can even add some chickpeas, olives or diced pickles in the saladWhat You can Put in Egg Salad

    The key ingredient in egg salad is, of course, hard-boiled eggs. You can add hung yogurt, mayonnaise for creaminess. You also need mustard, lemon juice, salt, Avocados and pepper. You can also add celery, red onion, chives. I like to add roasted red chilli flakes for the additional kick in egg salad.

    How To make egg salad

    This egg salad recipe is one of the easiest one to make. The only tricky part is to perfectly boil and peel the eggs. Once you peel the eggs make sure that the eggs have cooled down before you chop it. Adding chopped eggs when they are still warm will make the salad mushy.

    Start by boiling eggs. Add boiled eggs in cool water to cool them sufficiently.

    Peel the boiled eggs and chop them into small pieces. Cut half an avocado into small pieces.

    In a bowl add in chopped eggs, avocados, mayonnaise, dijon mustard, salt to taste and mix it well.  

    Serve it as it is or over lettuce wraps to make Keto egg salad rolls. 

    Top with chopped parsley cilantro or chives. Sprinkle roasted chilli flakes.

    Recipe Notes and Tips 

    • Adding a teaspoon of Dijon mustard to give your salad a delicious tangy kick and  flavour.
    • For the meal prep. you can make this egg salad in advance and store it in fridge for 1-2 days. 
    • If you are not eating it in salad leaves this is an excellent egg salad for sandwich.

    What You can Put in Egg Salad

    Is Egg Salad Good for Losing Weight

    This keto egg salad is perfect for losing weight if you are following otherwise calorie restricted, keto or low carb diet plan. As compared to classic egg salad this has 200 fewer calories and much less saturated fat.
    For additional fiber you can add celery, red onions but that might increase net carbs as well. but adds a load of fiber and makes it more filling.

    How long egg salad lasts in Fridge

    You can keep this egg salad in fridge for 2-3 days. However if you do not want a watery egg salad I suggest do not add salt when you are planning to store egg salad in fridge. Add salt only when you are ready to eat. This way your egg salad won't turn watery.

    Perfect Hard Boiled Eggs for Salad

    Perfect egg salad requires perfectly hard boiled eggs. The ones that have perfectly set egg whites and a creamy yolk. In my previous post I have shared tips to make perfect hard boiled eggs on stove top. Also you can make perfect Instant pot boiled eggs too.

    If you do not want to add mayonnaise, you can make keto egg salad with cream cheese as well. Or if you want extra taste you can add 1 tablespoon of cream cheese in this egg salad. While this will still be a keto recipe, Calories in egg salad will increase.

    Egg Salad Calories

    A traditional recipe of egg salad calories is close to 500. But, if you want a low carb recipe then try adding more vegetables and switching mayonnaise with greek yogurt. If you like you can try these other low calories recipes too.

    Ingredients

    • 6 Eggs Boiled/chopped
    • 1 Avacado cut
    • 1 ½ tablespoon mayonnaise
    • 2 tablespoon hung yogurt
    • 1 teaspoon Dijon Mustard
    • Salt
    • 1 teaspoon red chilli flakes
    • Iceberg lettuce to make wrap

    Instructions

    • To make Egg salad, firstly perfectly boil eggs.
    • When the eggs are hard-boiled, peel the eggs and allow eggs to cool down for a minute or two.
    • Gently chop the eggs and transfer them to a mixing bowl.
    • Now, cut an avocado and cut it into small pieces.
    • In the mixing bowl, add chopped avocado, and chopped boiled eggs.
    • Then add 1 and a half tablespoon of mayonnaise and a teaspoon of dijon mustard.
    • Add salt to taste and mix all the ingredients well.
    • You can serve it over iceberg lettuce to make these delicious keto wraps.

      I have made a similar recipe without yoghurt and dijon mustard. i will try your recipe tomorrow when i get the dijon mustard and avocado from the super market. My wife is 77 years old, diabetic and also has hypertension and Glaucoma. She has already lost the sight on her left eye and we are trying very hard to save the deteriorating right eye. The doctor has suggested she keeps away form Carbs. This lettuce based egg salad seems to be suitable. Thank you so much for this simple recipe which I can easily make for her. I hope you send me more as it is difficult to eat Indian curries without rice or bread. B N Reddy form South Africa.
