  • Green Cayenne Peppers This will give the green curry paste their color.
  • Thai Green Chilies – These are the small ones that will add the fiery kick to curry paste. If you have very low tolerance and want it to be very mild, then you can skip them completely.
  • Red shallots
  • Lemongrass stem – This is going to add an aroma to the curry paste. Fresh will be better, but you can use frozen too.
  • Galangal – This one is related to ginger, but has a different flavor all together. Similarly, fresh galangal is better but frozen can be used too.
  • Lime zest 
  • Ground coriander

  • Keep scraping down the sides while you are blending and add more water, if required.
