    An easy fluffy pancake recipe. No-fail pancake recipe perfect to make on weekends. They are quick and easy to prepare these homemade pancakes recipe is best to makes soft and fluffy pancakes. 

    You can make these fluffy pancakes recipe and you need only few simple ingredients from your kitchen. Most of these ingredients are pantry staples.

    How to Make Fluffy Pancakes

    You will not believe how simple it is to make fluffy pancakes with this simple no-fail recipe. I am not bragging but if you allow me I will say this will probably become your every Sunday pancake recipe. 

    If you were also depending on boxed pancake mixes its time to say Bye bye. Not that they are not good but why spend so much when everything you need to make best pancakes is sitting right into your kitchens. 

    I sometimes make Oatmeal pancakes or ragi pancakes too. But when I need fluffy and light pancakes, I always use this pancake recipe.

    Pancakes are not overtly sweet, but you can always adjust as per your taste. Vanilla extract also add a lovely aroma and flavour. 

    Ingredients to Make Pancakes

    Flour:  I use all-purpose flour. You can use a combination of all purpose flour and whole wheat flour as well.

    Sugar:  I use powdered sugar, but recently experimented with brown sugar. The pancakes were slightly brown but tastes moist. 

    Baking Powder: To make the pancakes airy, light and fluffy. 

    Milk: You can use skimmed milk, reduced fat milk or full fat milk as per your choice. To make them vegan I have suggested in the recipe notes below. 

    Eggs: I use eggs sometimes and sometimes make pancakes without egg. I have written about eggless pancakes substitutions in recipe notes below.  

    Butter: I use salted butter, because generally in the recipe a pinch of salt is added but I skip that and use salted butter instead. For pancakes without butter, substitute melted coconut oil.

    Vanilla Extract:Vanilla extract to add flavour. While making any dish just do not go for synthetic vanilla always try to add real extract for good flavour.

    Step by Step Method to Make Fluffy pancakes

    Whisk dry ingredients together. And Add milk to make a thick batter as shown in the video below.

    Now grease a skillet with butter and wipe it with tissue. We do not want too much butter here.

    With a ladle spread the pancake batter and cook these pancakes from both sides till golden brown.

    Pancake Toppings and Variations

    In this pancake recipe, I ave used mangoes because the season is almost over and I just wanted to savor them a bit more. You can go ahead and add strawberries (if available), any berries that you can get.

    Banana and chocolate topped pancakes taste almost like heaven and sometimes I use frozen strawberries thawed and sprinkled with some powdered sugar.

    If none of the fruits are available or you are not in the mood for fruits simply skip them. These light and fluffy pancakes taste good with a blob of butter and honey as well.

    Recipe Notes and Tips

    • You can use whole wheat atta too in place of all purpose flour. The texture of whole wheat pancakes is slightly dense.
    • you can make fluffy pancakes without eggs using chia seeds, mashed banana, cornstarch or applesauce in place of eggs.
    • The secret is to get the stove temperature perfect. It will take 45 seconds for the holes to appear. So cook each side for about 30 seconds most or 1 minute for an entire pancake.
    • You can mix the dry ingredients together and keep a batch saved for when you want pancakes for next time.
    • Just add eggs and milk at the time of making and you are ready to go.

    Ingredients

    • 200g grams all purpose flour maida
    • 2.5 teaspoon baking powder
    • 3 tablespoon sugar powdered
    • 1 egg
    • 200 milliliter milk
    • 5 milliliter vanilla extract or essence
    • 30g grams butter

    Instructions

    • Put maida, baking powder, sugar and salt in a bowl and mix well and keep aside.
    • Add egg, milk and vanilla together and whisk till no lumps.
    • Heat a pan on low to medium heat or griddle on stove and add ½ teaspoon of butter to melt. Use paper towel and wipe most of the butter off.
    • Pour ÂĽ cup batter into the middle of the pan and spread it slightly with same ladle.
    • When holes start to appear appear on top surface which will take about 40-45 seconds on low medium heat flip the pancake and cook the other side till light brown.
    • Take it out of the pan and cook all the pancakes till all the batter is used up.
    • Use butter again after 2 to 3 pancakes or depending on your non stick.
    • Serve hot with honey, maple syrup, fruits, butter on the side or as toppings.

      Is the 30g butter just used for spreading on the pan and not in the batter?

        Yes, 30g butter is used to cook the pancakes. As you have to apply butter multiple times while cooking all the batter.
