Street style egg bhurji recipe : Being a self proclaimed egg lover I pride my self with all dishes made with eggs. Also known as Anda bhurji this has a special place in my repertoire of Indian scrambled eggs.
This is one of those egg recipes which you might have enjoyed on road side after a late night movie show, or after a fun evening with your friends after the collage when you are craving something spicy, delicious and finger licking good.
Street side food has it's own unique taste and anda bhurji has a special place as far as street food is concerned. Basically it is Indian take on scrambled eggs. If you are an Indian you make scrambled eggs Aka egg bhurji more awesome with many spicy twists.

The base of this recipe is a masala which has onions, ginger, green chillies and tomatoes. Regular stuff, Right! But what makes it better is spices added to it and cooking method.
Now, as I said most street side vendors have their own secret to make best bhurji. This also depends on city again. When I make Delhi street style egg bhurji it is heavy on chaat masala. Mumbai street bhurji is flavoured with either pav bhaji masala or kitchen king masala.
Delhi style is not too high in butter, In Mumbai street food is heavy on on butter, cheese and spices and a lot of heat Anda bhurji is not really an exception.
How To Make Perfect Egg Bhurji
What can be simple and easy than scrambles eggs on toast. It's popular breakfast packed with lots of protein and nu
trients. The best part of eggs for breakfast is it is super quick to make. All you need is 20 minutes to whip up a kickass breakfast recipe with eggs that is tasty and healthier.
Ingredients to Make Egg Bhurji
Eggs: In my all egg dishes I prefer to use organic free range eggs, which is a healthy option for a protein rich breakfast or lunch or dinner.
Cooking Fat: Originally a lot more fat is used than my recipe, but since I make this at home I add a combination of butter and oil in controlled amount.
Spices and Seasonings : Most of spices for making this recipe are easily available. You need Red chilli powder, salt, turmeric powder, pao bhaji masala.
If you have problem finding pav bhaji masala which is heart of this dish, you can easily find it in any Indian grocery store.
Pav buns or any other bread of your choice to serve.
Green chillies, ginger (optional), onion and tomatoes
Start by heating a mix of oil and butter. Many recipes will ask you to use copious amount of butter but trust me you do not need that. At least not for this egg bhurji. You may want to leave butter for toasting pav to serve with this though.
Oil helps in sautéing onion to right amount and a knob of butter for the flavour. This combination works like a charm. Once the mix is hot add a lot of fresh chopped green chillies. You can really add as much as you want here because street style bhurji is always heavy on this.
Next add in bell peppers or chopped capsicum. Red green or yellow or a combination of all three is great. It adds a nice flavour and crunch in scrambled eggs.
To cook masala nicely saute' these bell peppers and add chopped tomatoes. Add salt to the masala at this stage because that helps tomatoes to cook faster.
Once cooked, add in spice powders, red chilli powder, turmeric powder, Pav bhaji masala, mix them to make onion tomato masala and at this stage add whisked eggs.
Cook these eggs on medium heat while scraping the bottom and sides of the pan simultaneously and cook the eggs till just before done because eggs keep cooking for sometimes even after stopping heat.

With a glass of fresh juice or sliced fruits is right combination of proteins and complex carbs. Eating eggs in breakfast keeps me full and tide me over till lunch so not much of unhealthy snacking in between except any of my herbal tea.
How to Serve Egg Bhurji
There are many ways you can eat and serve this delicious egg dish. Street style it is served with buttered toasted pav buns or white bread. It tastes great with any flatbread like paratha or chapathi or as a toasted sandwich filling.

- In this Mumbai style anda bhurji Pav their are lot of things that make it special. Just like other Mumbai street food this is quite spicy as lots of chillis are used.
- I have seen some people using copious amount of butter, I don’t think I can ever use that much in my kitchen. What I can assure you is you DO NOT need that much butter for tasty bhurji. As it is more than butter that is required to make this simple egg dish.
- While cooking eggs, the texture of eggs is utmost important for me me. Dry, stiff, rubbery, overcooked eggs with brown spots stuck on the is not my style of cooking eggs.
- For perfect egg bhurji, cook eggs with onion tomato masala till they are just cooked, because eggs cook quite fast and keep cooking in residual heat even off heat.
- I always like scrambled eggs a bit soft and fluffy, 90-95% doneness is what I aspire for, and they should be on my plate as soon as they are cooked.

Anda Bhurji Pav Recipe - Mumbai Style Egg Bhurji Pav
Ingredients
- 6 eggs Whole
- 1 Tbsp Oil
- 15 g butter
- 100 g onion chopped
- 75 g tomato chopped
- 2-3 green chilli chopped
- 50 g capsicum chopped
- Salt to taste
- 1 teaspoon Red chilli powder
- ½ teaspoon turmeric powder
- 2 teaspoon pav bhaji masala
- to taste salt
- coriander leaves
- 3 Buns ladi pav
- 1 tablespoon Butter to toast the buns
Instructions
- Break all eggs in the bowl, whisk them nicely and keep aside.
- Heat Oil and butter in a pan and add chopped onion and green chillis.
- Saute those for 2-3 minutes and add chopped capsicum/bell peppers.
- Cook till veggies become soft and add tomatoes.
- Cook for 2-3 minutes on medium heat till tomatoes are mashed and pulpy.
- Add red chilli powder, turmeric powder, pav bhaji masala and mix well.
- Pour egg mixture in the skillet and cook eggs, keep stirring them in-between so that they do not stick to pan and cook till they are almost done to 95%.
- Cut pav bun from the middle and toast both the parts in a skillet or tava. Likewise toast all pav buns.
- Serve the egg burji with toasted and buttered pav and garnish with coriander leaves and some more green chilli.
