Cowboy Caviar FAQ

What is cowboy caviar?

Cowboy caviar, also known as Texas caviar, is a fresh salad and dip made with beans, corn, bell peppers, tomatoes, onion, and cilantro in a tangy lime dressing. It can be served as a chunky dip with tortilla chips or as a light summer salad, and it is naturally vegetarian.

Why is it called cowboy caviar?

The name is a playful nod to fancy fish caviar. It was created in Texas in the 1940s, where the beans stand in for caviar pearls. It is also called Texas caviar or Mexican caviar, though it has no seafood and no connection to true caviar at all.

How long does cowboy caviar last in the fridge?

Stored in an airtight container, cowboy caviar keeps for up to 4 days in the refrigerator. It actually tastes better after a few hours as the beans and vegetables soak up the lime dressing, which makes it an excellent make-ahead dish for parties and meal prep.

Is cowboy caviar healthy?

Yes. Cowboy caviar is high in plant protein and fiber from the beans, and full of vitamins from the fresh vegetables. It is naturally vegetarian and can be vegan and gluten-free. Serve it with vegetables instead of chips to keep it light while still filling.

What beans are best for cowboy caviar?

Traditional cowboy caviar uses black beans and black-eyed peas, but kidney beans, pinto beans, or chickpeas all work well. A mix of two beans gives the best color and texture. Rinse and drain canned beans thoroughly so the salad does not turn watery.

What do you serve with cowboy caviar?

Cowboy caviar is most popular scooped up with tortilla chips, but it is just as good as a taco or quesadilla filling, a topping for nachos or baked potatoes, a side for grilled dishes, or spooned over greens as a hearty salad.

Can you make cowboy caviar ahead of time?

Absolutely. Cowboy caviar is designed to be made ahead. Mix it up to a day in advance and chill it, adding the avocado and any fresh cilantro just before serving so they stay bright. The flavor deepens as it rests, so it is ideal for parties.

How do you keep cowboy caviar from getting watery?

Drain and rinse the beans and corn well, seed the tomatoes if they are very juicy, and salt lightly until just before serving. If you prep it far ahead, keep the dressing separate and toss it in shortly before the salad goes on the table.
