    Delicious and Healthy baked samosa recipe which you can enjoy without guilt! Sounds good? Let me show you how you can make healthier, non-fried, baked samosa in the oven and air fryer.

    Samosa is one of the best Indian snacks ever! That is why most of us love it. If you are not Indian and have eaten them at any Indian restaurant I know most of you already are in love with the flaky pastry filled with spicy stuffing.

    I promise this is an easy and healthy recipe of samosa to arm you with technique to make best baked samosa.

    Samosa is tasty but one major thing that keeps most of us away from samosa is oil. But the baked samosa recipe I am showing you today will enable you to make samosa without too much oil. In fact, in making stuffing I have not used oil at all. 

    So without further delay let’s talk about a baked samosa recipe. These two types of samosa are air-fried or baked to perfection.

    I am going to talk about two major cooking methods of baking samosa. Instead of deep-frying samosa, we are baking them. First baked samosa in an Air-fryer and second baked samosa in the oven. I have a traditional deep-fried Aloo samosa recipe, And samosa recipe with samosa Patti as well if you want to make regular Punjabi samosa.

    • You can make them ahead and freeze them.
    • Cocktail samosa are perfect party appetizers

    Ingredients 

    Ingredients for Baked samosa dough

    All-purpose flour/Maida: To make baked samosa dough I have used regular APF or maida. If you want to make them even healthier you can use whole wheat flour but the taste and texture will alter too much so I prefer to use maida in making samosa covering.

    Salt to taste 

    Oil: Use any vegetable oil or ghee as per your preference. 

    Ajwain/carom seeds (optional): These taste great in the covering but if you don’t have just skip. 

    For Veggie and Paneer filling 

    Paneer/Indian cottage cheese: Use homemade or store-bought Paneer or Indian cottage cheese. Easy vegan substitute for paneer is tofu so you can use that as well. 

    Cabbage: you can use any other vegetables like finely chopped capsicum or grated carrots if you don’t like to use cabbage.

    Kidney beans/rajma: Kidney beans are a good healthy option. You can use canned kidney beans that are rinsed and drained. 

    Cheese: Use any hard cheese variety as per taste. I have used reduced-fat cheddar cheese.

    Cherry tomatoes: These are optional but add a nice tang. 

    Red chilli flakes: to spice up the samosa, use red chilli flakes. 

    Peri-peri masala: Spicy samosa is the best so I have used this peri masala blend for a delicious taste.  

    To Make Aloo stuffing for Baked Samosa

    Potatoes: Use boiled and roughly mashed potatoes.

    Green Peas: Use shelled fresh peas or frozen peas

    Spices, Seasonings and flavourings: green chillies chopped, Fresh coriander leaves, ginger, red chilli powder, coriander powder, mango powder, water, salt to taste.

    Oil: any vegetable oil works well.

    Stepwise Method to Make Baked Samosa

    To make wrappers for Baked Samosa

    Combine 1 cup flour, salt to taste, ajwain and 2 tablespoon oil. Mix them well and make a stiff dough by adding cold water. Rest the dough for 30 minutes.

    Samosa Stuffing 

    For samosa stuffing In a bowl mix together small chopped paneer, cabbage, boiled Rajma, grated cheese cherry tomatoes, salt to taste, red chilli flakes, peri masala, and a tablespoon of mayonnaise. Combine them to make samosa stuffing and keep aside.

    To shape samosa

    Now, divide the dough into 4 equal parts and roll out one portion.

    Cut this in the middle into two parts and make a cone-like this. Fill the stuffing and seal the edges. Make all samosa like this and brush with oil.

    Baking samosa in Air-fryer

    Now Preheat Philips air fryer by setting the temp at 180C/355C and timer at 5min. After that take out the basket And place the samosa in a wire basket of the air fryer.

    Air fry for 15-17 minutes. Your crispy air fried much healthier Mexican paneer samosa is ready.

    Baked samosa in Oven

    To bake samosa in the oven preheat the oven at 180/355C for 3 minutes. On a baking tray lined with parchment paper or sprayed with oil place, oil brushed samosa in a single layer. Bake these samosas at 180C for 8-9 minutes. Turn them over and bake for another 5-6 minutes till samosa covering is golden brown.

    Recipe Tips & Notes

    You can make these samosas ahead before the baking stage and freeze them.

    Samosa stuffing can be made as per your choice. Classic Punjabi samosa stuffing is aloo masala. But practically any sandwich stuffing can be used in samosa so you can experiment as your heart desires.

    You can make regular size samosa or mini cocktail samosa for parties.

    These are few commonly asked questions regarding making samosa 

    Can I freeze samosa?

    You can freeze these samosas. To freeze them make samosa as described above. Take a baking tray or big plate place samosa after brushing a single layer onto this tray. Place this tray in the freezer and freeze them for 2 hours. After that, you can store them in airtight containers.

    DO not store frozen samosa in a ziplock bag because the covering can break after freezing if there is some heavier item stacked alongside. 

    How to Bake Frozen Samosa?

    You do not thaw frozen samosa. Place them directly in the air fryer or preheated oven and bake 2-3 minutes extra.

    How to Store Leftovers?

    You can store Leftover samosa in an airtight container in the fridge. In the fridge, these stay good for 1-2 days. If you want to store for more time, freeze these samosas in a freezer-safe container. Frozen samosa stays good for 8-12 weeks easily.

    How to Reheat Frozen Samosa

    To reheat frozen samosa first thaw them over the counter for a few minutes. You can reheat frozen samosa in the air fryer for 4-5 minutes. 

    Place them in the preheated air fryer at 180C/355F fo4-5 minutes.  

    To reheat frozen samosa in the oven place them on a baking sheet. Preheat the oven and set the temperature to 170C and heat them for 10-12 minutes.

    For reheating frozen samosa in the microwave. Place frozen samosa in a single layer. Microwave on medium power for 2-3 minutes.

      Question- could I make the dough in advance and roll it out and fill another day? If so, how long do you think the dough would keep in the refrigerator and are there any adjustmetns you would make?
