- Heavy Cream: When whipped, traps air for that classic churned mouthfeel. For making creamy and rich ice cream, heavy cream or whipping cream is good to use. For dairy-free mango ice cream with coconut milk, chill 2 cans full-fat coconut milk overnight, scoop solid cream.
- Flavor boosters (optional): pinch of sea salt, ½ tsp vanilla, squeeze of lime, or 1 tbsp toasted coconut flakes folded in.
How to Make Mango Ice Cream- Step by step process
Puree Mangoes (2 cups pulp)
- Peel & cube 2 large ripe mangoes. Blitz in blender until completely smooth. (Aim for 2 cups / 480 ml pulp.) (photo 1,2,3)

- To Cook The Puree: This is optional step. This adds to the taste but you can skip the step and still your homemade mango icecream turns out great. For this Heat the mango puree in a pan. Keep stirring the puree and cook it till it reduces half in amount. (photo 4)
- Fold in Mango Puree: Add mango puree in condensed milk, folding until the mixture turns sunset-orange.
Make Ice cream Base

- Whip the Heavy Cream: In a cold bowl, whip heavy cream to soft peaks (about 2 minutes with hand mixer).
- Make Ice-Cream Base: Pour the mango puree sweetened condensed milk into whipped cream; gently fold with a spatula.

- Freeze: Transfer to a 9 × 5-inch loaf pan or any freezer safe glass container. Press parchment directly on top to prevent ice crystals.
- Freeze ≥6 hours (overnight best).
Ready to eat? Take the mango ice cream out of the freezer and let it thaw for 5 minutes to let it soften a little. Scoop and serve!

Mango Ice cream Recipe
Ingredients
- 4 Alphonso Mangoes
- 400 ml Condensed Milk
- 2 cup Cream
Instructions
(Mango Puree)
- Wash the mangoes and pat them dry. Dice mangoes as shown in steps and video. Discard the skin of mangos and puree them using a food processor or in a blender.
- Heat a pan and pour the mango puree in it. Keep the heat between medium and low. Keep stirring the puree and cook it for 8-10 minutes. till it reduces to half the amount.
- Once the puree has reduced, turn off the heat and allow the puree to cool.
(For Ice Cream)
- In a mixing bowl pour sweetened condensed milk and cooled mango puree.
- Take a big bowl and whip the cream using a hand mixer. Beat it until stiff peaks start to form in the cream.
- Pour in condensed milk, mango puree mixture in the cream bowl. Mix the cream with the ingredients. With gentle movements fold in until well combined.
- You have to mix the cream softly, till it is lump-free. It will take a few minutes, so patiently fold the cream.
- Now, pour the mango ice cream in a freezer safe container with a lid and cover it with parchment paper.
- Let the ice cream freeze for 10-12 hours.
- Take out the parchment paper and allow the ice cream to soften. Then scoop the creamy mango ice cream and serve.

Recipe Notes and Tips
- You can add any flavors of your choice for making it more delicious. In this recipe, I have kept the pure mango flavor. Add Dried Cranberries added in before freezing. The tartness of dried berries with mangoes taste absolutely incredible. You can also add chopped cashew nuts or hazelnuts which complements mangos as well.
- Use milk cream with good fat content it helps to add a great smooth body and aeration in the ice cream.
- Sometimes you can face problems while whipping cream, it may not whip properly. Place a silicone freezer gel mat from the freezer or keep the bowl over a bowl in which ice is placed.
