    This salad is perfect for any occasion, You can eat this on its own or serve it as part of a larger meal.It's perfect for a light lunch or dinner, or can be served as a side dish. It is super easy to make so you can bring it t a party or potluck. it is perfect for those who are short on time. If you are looking for a new and exciting way to enjoy beetroot, then be sure to give this pomegranate salad a try!

    Ingredients for Beet Salad

    To make this beetroot pomegranate salad, you will need:

    Beet/beetroot: Roast the beet or boil it and peel it. I use both types of beets as per convenience weekly and store them in the fridge to use in salads, soups and other dishes.

    Pomegranate seeds: You can use ready-to-use packs from the store or buy whole pomegranates, peel and separate the pearls.

    Lettuce: I have used romaine lettuce but you can use any greens of your choice. Arugula or iceberg lettuce also works great in this salad.

    Cucumber: Use any cucumbers of your choice. Persian cucumbers or English cucumbers all taste good and are refreshing.

    Corn: Cooked corn kernels or frozen and thawed corn.

    Walnuts: Walnuts add a lot of healthy fats. I have used Indian Kashmiri walnuts that are organic and fresh.

    Red kidney beans: Smaller red kidney beans that are boiled. You can substitute with canned beans that are rinsed and drained.

    Olive oil: Good quality extra virgin oil is healthy and tastes good

    Lemon juice

    Herbs: I have used mint leaves but a combination of mint leaves and basil also tastes good.

    Seasoning: Sea Salt to taste, Roasted red chilli flakes, Grated ginger

    Simply mix together chopped veggies in a bowl. Prepare strawberry vinaigrette by mixing all ingredients mentioned.

    Pour dressing over the crispy veggies and toss everything to coat.

    Serve immediately or store in the fridge for later.

    Yes you can totally replace beets in this beet salad with the canned beans. Simply rinse the canned beets and use it as mentioned in the recipe.

    Variations of beetroot pomegranate salad recipes

    There are many different ways to make a beetroot pomegranate salad, so you can customize it to your own taste preferences.

    You can make different variations by adding or substituting a few ingredients.

    Other than the ingredients mentioned above you can add oranges peeled and cut into segments, chopped kiwi, apples etc.

    You can also add marinated feta cheese, blue cheese or goat cheese.

    Walnuts can be replaced with pistachio or pecans.

    Lettuce can be replaced with Kale, arugula, rocket leaves or mizuna leaves.

    Can you make Beet Salad Ahead of Time?

    Yes You can make beet salad ahead of time. I combine all the veggies in one air-tight container and store salad dressing in another small bottle. When I am serving I just mix and toss the ingredients from these two containers in big salad bowl. It tastes just like fresh.

    You can store the leftover beet salad in the fridge for upto 3-4 days.
