Ingredients for Beet Salad
To make this beetroot pomegranate salad, you will need:
- Beet/beetroot: Roast the beet or boil it and peel it. I use both types of beets as per convenience weekly and store them in the fridge to use in salads, soups and other dishes.
- Pomegranate seeds: You can use ready-to-use packs from the store or buy whole pomegranates, peel and separate the pearls.
- Lettuce: I have used romaine lettuce but you can use any greens of your choice. Arugula or iceberg lettuce also works great in this salad.
- Cucumber: Use any cucumbers of your choice. Persian cucumbers or English cucumbers all taste good and are refreshing.
- Strawberry Relish: the homemade recipe is given here.
- Corn: Cooked corn kernels or frozen and thawed corn.
- Walnuts: Walnuts add a lot of healthy fats. I have used Indian Kashmiri walnuts that are organic and fresh.
- Red kidney beans: Smaller red kidney beans that are boiled. You can substitute with canned beans that are rinsed and drained.
- Olive oil: Good quality extra virgin oil is healthy and tastes good
- Lemon juice
- Herbs: I have used mint leaves but a combination of mint leaves and basil also tastes good.
- Seasoning: Sea Salt to taste, Roasted red chilli flakes, Grated ginger

Best Beetroot Salad Recipe
Ingredients
- 300 g Beetroots
- 2 cups cucumber
- ½ cup corn
- 1 cup kidney beans
- 3 Walnuts
- basil Few leaves
- 1 cup lettuce
Salad Dressing
- to taste Sea salt
- 1 teaspoon lemon juice
- 1 tablespoon strawberry preserve
- 2 tablespoons olive oil
- 1 teaspoon crushed ginger
- .5 teaspoon chilli flakes
Instructions
- Roast beetroots like this recipe here.
- Cut the beetroots into 6-8 pieces lengthwise.
- Heat orange juice in a pan and let the roasted
- Take a mixing bowl and place drained beets in this bowl.
- In a small bowl whisk together, honey, lemon juice and sea salt. Pour this dressing over beets when they are still hot and mix them well to coat the dressing.
- Arrange the beets on the plate, sprinkle some torn up basil leaves and finally finish with feta divided equally according to the portions you served.
