    Savoury waffles loaded with vegetables. These Savoury Waffles recipe is perfect when you need a quick and healthy snack in minutes. And I have made it using leftovers.

    This savoury waffles recipe is one of the easiest waffle recipe that is healthy and stuffed with veggies.

    I love idlis and dosa and have dosa idli batter in my fridge almost all the time. When I want to use leftover idli batter this savoury waffle recipe is one of the best leftover idli batter recipe.

    Ingredients

    Since the base of this recipe is leftover Idli batter you need freshly prepared idli batter or leftover idli batter along with your choice of vegetables to make it healthier.

    • Idli/dosa batter
    • Purple cabbage
    • Green chillies
    • Zucchini
    • Cilantro
    • Salt
    • Flex Seeds
    • Olive Oil spray/olive oil

    Instructions

    This recipe is super easy to cook. If your idli batter is prepared then it takes approximately 10 minutes to make complete batter, chop veggies and cook these waffles. Below is Step by step method with pictures.

    Mix together cabbage, leftover idli batter, green chillies, salt.

    Combine everything and make thick batter

    Also add grated zucchini and chopped coriander/cilantro leaves.

    Heat waffle press and spray with olive oil.

    Pour batter in the cavity of waffle press

    Cover and cook for 3-4 minutes

    Hint: For quick turnout of waffles make sure to preheat the waffle press for 2-3 minutes before pouring batter for the first batch. This step will also ensure that waffles do not stick to press and come out easily. In this recipe I have used this Lifeline waffle maker.

    Substitutions

    Since I am sharing the recipe for using leftover idli batter. The base remains same but you can use vegetables as per your choice.

    • Purple cabbage - instead of purple cabbage, you can use regular green cabbage or spinach.
    • Peas - I have not added peas you can add shelled and boiled peas.
    • Onions- Chopped onions or capsicum can be added.
    • Zucchini- You can substitute grated zucchini with grated bottle gourd

    Equipment

    A good waffle maker is a must for making crispy and fluffy waffles. You can use an electric waffle maker or a cast iron non electric one. I have used this Lifeline waffle maker in making this recipe.

    Storage

    I usually make them fresh because recipe hardly takes any time. I usually have chopped grated veggies in my fridge it's only a matter of few minutes. However in case you want to make them ahead of time or have leftovers you can store these waffles in the fridge for 2 days or in the freezer for 3-4 weeks.

    To reheat just thaw them in the fridge and pop them in a pre-heated Air fryer at 180c for 3-4 minutes.
