Ejjeh Recipe
Ingredients
- 2 eggs
- ¼ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoon fresh cilantro (finely chopped)
- 1 green onions finely chopped
- 1 tablespoons fresh mint finely chopped
- 1 teaspoon olive oil
Instructions
- In a large bowl, whisk two eggs.
- Fold in the cilantro, green onions, and mint. salt, and pepper and whisk until well combined.
- Heat 1 teaspoon olive oil in a non-stick skillet over medium heat.
- Pour the omelette mixture into the heated skillet.
- Cook until the eggs are set and golden brown, about 2-3 minutes,
- Place a spatula under the omelette, fold over in half and transfer to a serving platter.
- Serve the Ejjeh immediately on its own or with yogurt and pita bread.
