Lauki Kofta curry is tomato-based vegetarian curry from Indian cuisine. Lauki Kofta made with bottle gourd and gram flour are cooked in a light brothy but spicy curry.
Koftas are basically balls of minced meat and belong to the family of meatball dishes popular in the Middle East and Central and South Asia. But in Indian Cuisine, we have a number of vegetarian varieties of koftas that include koftas made from lauki, paneer, potato etc.
Today I am going to make one of that list -a rich, creamy and delicious lauki kofta curry. Lauki is also known as ghiya in Punjabi and English name for lauki is bottle gourd. Usually, it is not one of the vegetables that are loved by kids or in some cases adults too. But every woman secretly tries to include it somehow in her family’s diet plan due to its good nutrition in bottle gourd.
So, if you too are struggling with feeding green vegetables this lauki kofta curry is great Indian curry to change the outlook towards lauki. I am not saying this is light curry like regular Lauki curry but if I compare it with other Kofta curries this is not as rich either.
So, once in a week, you can definitely include this ghia ke kofte in your everyday Indian meals. It is a boon for mothers who want to cheat their kids and feed them lauki as this dish camouflages the not so liked taste of lauki entirely.
For making Lauki Kofta Curry, Lauki or bottle gourd is grated and mixed with spices and besan(gram flour). This dough for lauki kofta is then made into small balls which are then deep fried to make lauki koftas. The lauki kofta is golden brown from outside and soft from inside.I remember we used to eat half of them just like that after frying as they were so hard to resist.The fried koftas are then added to a rich tomato gravy which is flavored with spices and finally served with roti or naan
