    Semolina Pancakes

    These savoury Semolina pancakes are crispy outside and soft inside, with lots of healthy ingredients and veggies you can bring together healthy and tasty in one breakfast dish.

    Quick and easy snack recipe made with semolina or sooji, these semolina pancakes are one of the best savoury pancakes you can make for breakfast.

    In India, these are known as suji pancakes which is a variation of popular South Indian breakfast Uthappam. These are also known as sooji cheela. But this time I made certain variations which I feel makes it my best savoury pancakes of all time.

    To make these all you need to do is mix some ingredients and make crispy outside and soft inside pancakes.

    Pancakes are one of the best breakfast, no doubt about that. While I love classic American pancakes, I still crave savoury pancakes. These semolina pancakes or Suji pancakes are perfect variations if you want to change things up. And if you are a potato lover these Classic Crispy Potato Pancakes are a must try. 

    Of late I am making a lot of semolina recipes like these crispy Semolina and Veggie squares, steamed Instant idli (semolina cakes), crispy Instant rava Vada (Semolina fritters).

    You can make a lot of recipes with semolina flour. Another recipe which I am soon planning to try out is another variety of Semolina pancakes from Morocco which is sweet like regular pancakes.

    Coming back to these Semolina pancakes, these are different from normal pancakes. First, they’re crispy from outside and savoury, unlike regular ones. So you serve these pancakes with savoury dips of your choice I mostly serve them with green chutney, tzatziki or even plain yogurt.

    Ingredients For Semolina Pancakes

    Semolina flour, Oats, and paneer (Indian cottage cheese) are the main ingredients used in making these suji or semolina pancakes. Usually oats are not added in this, but I usually like to make use of oats in Indian recipes. So I added powdered instant oats and I am glad I did. It added a nice texture. 

    I have added chopped onions and tomatoes, You can add vegetables of your choice. Also, green chillies add a great kick and nice heat. If you want you can substitute with jalapeño.

    A sprinkle of mustard seeds and sesame seeds on the pancake makes it taste it one of the best savoury pancake.

    How to Make Savoury Semolina Pancakes

    For Making Instant Breakfast Mix ( You can use this in making Instant Idli, Vada too)

    • Heat oil in a pan [photo1] add asafoetida/hing,  mustard seeds, Chana dal, urad dal, cumin seeds and stir fry for a minute. [photo2]
    • Now add chopped ginger, green chili mix and stir for few seconds.
    • Add curry leaves and fresh coriander leaves. Cook these till these are fully dry and dehydrated. [photo3]
    • Now add semolina/sooji and saute on low flame for 5-7 minutes. keep stirring it. [photo4]
    • Switch off the flame and add salt. Instant breakfast mix is ready [photo5,6] 

    1. Grind instant oats and make a smooth powder. [Photo 1]
    2. Next in Blender jar of grinder, add 1 cup breakfast mix, ground oats powder, Paneer cubes, milk, and grind it to make a smooth paste. [Photo 2,3,4,5]
    3. Add little more water to make a batter of regular pancake consistency.

    • Now to make pancake batter, add chopped onions, chopped tomatoes, chopped green chillies and salt to taste. [Photo 1]
    • Mix well to combine and add baking soda. Mix well to make a fluffy batter. [Photo 3]
    • Now in a non stick pan heat 1 teaspoon oil and sprinkle a pinch of mustard and sesame seeds [Photo 3,4].
    • With a ladle pour pancake batter and do not spread. Just place it over pan. [Photo 5]
    • When cooked on one side flip add a bit of oil on the sides and cook till crispy and golden brown from other side as well. [Photo 6]

    How to Make them Vegan

    Follow the usual recipe but substitute paneer with tofu. Almond milk in pancakes tastes best as far as Vegan substitution of milk is concerned. Otherwise, you can add oats milk too.

    • Take care not to make the batter very runny. It will remain towards a thicker side.
    • Use a non-stick pan because otherwise, it tends to stick to the pan.
    • You can make the pancake batter mix/ Breakfast mix in advance and make these pancakes very quickly in 20 minutes.
    • Also, if you want to make the semolina pancake batter in advance make the batter as shown in step by step picture instructions and video except do not add baking soda. You can add baking soda just one or two minutes before making pancakes.
    • You can store the savory pancake batter in the fridge for up to 2-3 days

    Ingredients

    For Breakfast Mix

    • ½ cup semolina/rava/sooji
    • 2 Green Chillies 
    • 1 tablespoon Ginger
    • 1 sprig curry leaves
    • 2 tbsp coriander leaves / cilantro
    • ½ teaspoon Salt
    • 2 1tbsp Cooking Oil
    • ½  tsp   Mustard Seeds
    • ½  tsp  Cumin Seeds
    • 1  tsp  Bengal gram /chana daal
    • 1  tsp   White Lentils
    • ¼  tsp   Asafoetida / Hing powder

    For Pancakes

    • 100 gm Paneer or cottage cheese
    • 1 cup milk
    • Salt to taste
    • 1 Green chilli chopped
    • ¼ cup Onion chopped
    • ⅓ cup oats instant oats
    • ¼ cup Tomatoes chopped
    • 2 tablespoon Cooking Oil
    • 1 teaspoon baking powder

    Instructions

    To Make Instant Mix
