    An original weight watchers zero point soup recipe. A flavourful zero point vegetable soup recipe to lose weight or go back on a healthy diet track in the new year.

    The vegetables in the weight watchers soup keep you full for longer periods of time without consuming excessive amounts of carbs.With carrots, celery, onion, ginger, fresh herbs and vegetables This is a great soup in winters to warm you up and boost your immunity.

    This delicious and healthy Detox Vegetable Soup is perfect to restart your healthy diet after holidays and new year parties. Packed with lots of nutritious veggies this detox soup recipe is quite tasty and wholesome soup to keep you warm and nourished.

    • Quick soup recipe that can be prepared in 20 minutes.
    • Great soup recipe to enjoy as a part of a healthy low calorie diet weight watchers diet.
    • You can enjoy this zero point soup as a meal with a protein side or as a snack. 
    • A fun and healthy way to add lots of vegetables is your diet.
    • Low in calories but full of nutrients.

    Ingredients For Weight Watchers Soup

    Broth- You can go for vegetable broth or nonfat beef/chicken broth (reduced sodium). In this recipe I'll be using vegetable broth.

    Herbs- Thai Ginger- Also known as glangal, Basil leaves,dried oregano and dried parsley.

    Tomato paste- It lends a delicious tangy taste and body to the vegetable soup.

    Vegetables- Cabbage, Onion, celery, Carrot, Green beans, Zucchini.

    Spices & Seasonings- salt and pepper for seasoning

    Cooking Spray: I have used Pam Olive oil cooking spray.

    What vegetables to add to this Vegetable soup?

    One of the reasons why I love making this soup is because the recipe is flexible and  you can customise it as per your taste. You can use a wide variety of vegetables in your soup and it can never go wrong. 

    You can customise the veggies from the list below and adjust a few seasonings to give it that extra ounce of aroma and flavour.

    1. Capsicum/bell peppers
    2. Broccoli
    3. Carrots
    4. Beans
    5. Green chilly
    6. Zucchini
    7. Cabbage
    8. Peas
    9. Baby corn
    10. Bok choy
    11. Butternut squash 
    12. Mushrooms 

    There are many more options. I suggest you google zero point vegetables on the internet and use your favourite ones from the list.

    Instructions - Step by Step Pictures

    Take a dutch oven or a thick bottomed saucepan and spray it with cooking oil spray.

    Once the pot is hot, bring the heat to medium and add onions, celery, carrots, zucchini, green beans and saute for 3-4 minutes.

    Add in salt, red chilli powder or cayenne pepper powder, black pepper powder, chopped basil, oregano and parsley along with tomato paste.

    Add vegetable broth or homemade vegetable stock. 

    Stir everything well and add chopped cabbage.

    Cover with a tight fitting lid and cook for 10-15 minutes on low heat.

    Enjoy the soup hot or warm.

    How to make weight watchers soup in instant pot?

    Spray the inner pot of Instant Pot with cooking oil spray. 

    1. Start the IP on saute mode and add onions, celery, carrots, zucchini, green beans and saute for 3-4 minutes.
    2. Add in salt, red chilli powder or cayenne pepper powder, black pepper powder, chopped basil, oregano and parsley
    3. Add tomato paste.
    1. Add vegetable broth or homemade vegetable stock. 
    2. Stir everything well and add chopped cabbage.
    3. Cover with an IP lid and set the mode on low pressure for 4 minutes. Make sure that the pressure valve is in the sealing position.
    4. After this allow the pressure to release naturally for 5 minutes and then force release the pressure.
    5. After the pressure is released completely, open the pressure cooker and enjoy the soup hot or warm.

    Substitutions

    • Vegetables- I have used cabbage, onions, carrots, green beans, and zucchini  but I have mentioned a wide array of vegetables you can use. Zucchini, bell peppers, and chillies are some of the vegetables that taste super delicious in soup.
    • Broth- Instead of vegetable broth, you can go for mushroom broth, bone broth or chicken broth.
    • Ginger- Thai ginger adds most flavour in the soup but if you can’t find it use regular ginger.
    • You can add garlic if you like the taste.

    Recipe Notes

    • If you prefer thicker soup you can puree it completely and enjoy. Or puree half the amount and add back the rest of the soup with chunky vegetables. 
    • Some people claim that this soup is the key to their weight reduction success. It's a delicious afternoon snack or dinner appetiser whenever you feel hungry. 
    • You can make this vegetable soup in a variety of ways. Add or remove vegetables to suit your preferences. 
    • One can use frozen veggies instead of fresh ones to save time but the texture will be different slightly. Frozen vegetables require less cooking time so reduce the cooking time to half. 
    • You may also buy modest quantities of pre-cut veggies at the salad bar at your store.

    Storing Veggie Soup

    You can store the leftover vegetable soup in the fridge for up to three days. If you want to freeze it I recommend freezing it in single serve freezer safe containers. That way it is easier to warm it up and enjoy a delicious bowl of soup any time.

    Serving Suggestions

    Unlike some of the early Cabbage Soup recipes, this soup is flavorful, light, and full of crisp fresh veggies. It may be eaten with a piece or two of Low Point Bread for a low point lunch, or it can be consumed in between meals if you need to stave off hunger!
