More often than not we cook eggs and toast for breakfast because it's easy, filling, healthy and simply delicious. It is filled with cheese and veggies. Eggs are considered to be the perfect breakfast as they have the right amount of proteins and calcium to keep you full without making you gain weight.
You know my love for eggs so I can eat it for breakfast and lunch and dinner and still couldn't get enough of this egg sandwich. It's amazing how a simple dish like bread omelette can be made with so many different variations.
So if you're someone who can't resist the Indian street style food but want to fit it in your diet, then here's a perfect recipe that you can try out for breakfast, lunch or dinner.

Ingredients
- eggs: Organic free range eggs taste best and are good for health. But regular eggs also work for this recipe.
- Unsalted butter
- Bread: It could be anything milk bread, brown bread, whole wheat bread.
- Cheddar Cheese slice
- pices and Seasoning: Salt, black pepper, Mixed herbs
- Fresh Ingredients: Green chilli (finely chopped), Onion (finely chopped), Coriander leaves(finely chopped), Tomatoes thinly sliced

How to Make Breakfast Sandwich - Step by Step
- In a bowl break eggs and season with salt. Start whisking the eggs. You can add milk if you wish to since it makes the eggs softer and fluffier.
- In a pan, melt the butter. Add chopped onions and chillies.
- Now, add the whisked eggs to the pan. Swirl the pan to ensure that the omelette mixture is uniformly distributed and covers the whole pan.
- Place two pieces of bread over the omelette.
- Flip the bread right away. The egg mixture would cling to the bread a little.
- On medium heat, cook for 30 seconds. Flip the omelette and the bread pieces over. (Watch the video to get it right)
- Now, fold the sides of the omelette as shown in the picture and add a few slices of tomato on one slice and a slice of cheese on the other.
- Now, fold one side of the bread over another so as to make the sandwich. Keep cooking for 1-2 minutes for the cheese to melt.
- Serve it on a plate and sprinkle chilli flakes and mixed herbs.
- Cut the egg sandwich into four pieces and enjoy with ketchup or as is.
Substitutions
- Bread- You can use any bread ranging from white bread, sandwich milk bread, multi grain bread, wholewheat bread or dour dough.
- Veggies- If you don't wish to add onions, you can simply eliminate it and add any other veggie if you wish to. You can even add mushrooms and broccoli to make it an extra healthy morning meal.
- Cheese Slice: You can use shredded cheese but make sure it spread it out evenly in the sandwich.
Variations
- Gluten free- To make this street style bread o elite gluten free, you can use gluten free bread.
- Dairy Free- To make it dairy free you can switch the cheese slice with lactose-free philadelphia cheese or any other dairy-free cheese.
- Healthy Swaps: Instead of full fat milk, you can use skimmed milk or oats milk in your street style bread omelette
- More Indulgent: To make it even more creamier, you can always add a dollop of sauces such as mayonnaise or mustard sauce.

- The key to your perfect bread omelette sandwich is not overcooking the eggs. The bread omelette tastes the best when it's still juicy and not burnt.
- Make sure to keep the pan on low flame for the gas to cook properly or else you will burn the pan and the egg will stick to it rendering it spoiled.
Storage
You can make ahead breakfast egg sandwiches and store it in the fridge for 2-3 days. You can even freeze them for 1 week.
When You want to serve simply take them out from the freezer and thaw them in the microwave and serve.
If you have stored them in the fridge simply take them out reheat in the microwave for a minute and enjoy.

Breakfast Egg Sandwich
Ingredients
- 2 eggs
- ¼ teaspoon salt
- ¼ teaspoon green chilli finely chopped
- 2 tablespoon onion finely chopped
- 1 teaspoon coriander leaves finely chopped
- 1 teaspoon butter
- 2 sandwich bread slices
- ¼ teaspoon Black pepper
- ½ Tomatoes
- 1 Cheese slice
- ¼ teaspoon Mixed herbs
- 1 teaspoon Coriander for garnishing
Instructions
- Get the onions and green chillies and chop it into tiny pisces. Keep it aside for a while
- Start whisking the eggs. You can add milk if you wish to since it makes the eggs softer and fluffier.
- In a pan, melt the butter until it is very hot. In the same pan, add the previously chopped onions and chillies.
- Now, add the whisked eggs to the pan. Swirl the pan to ensure that the omelette mixture is uniformly distributed and covers the whole pan.
- Place two pieces of bread over the omelette. Flip the bread right away. The egg mixture would cling to the bread a little. Season with black pepper.
- On a medium burner, cook for 30 seconds. Flip the omelette and the bread pieces over.
- Now, fold the sides of the omelette as shown in the picture and add the slices of tomato on one slice and a slice of cheese on the other.
- Place the two pieces together and wait for the cheese to melt.
- Now put it out of the pan and garnish it with chilli flakes and mixed herbs. You can even use coriander leaves or mayonnaise.
