    Egg Paratha is a spicy egg stuffed, protein-packed, whole-wheat paratha recipe for breakfast. Also known as Anda paratha, this paratha stuffed with eggs and spice mixture is a fulfilling Indian egg breakfast recipe for egg lovers!

    Pair it with a cup of masala chai for a delicious breakfast.

    Why Eggs For Breakfast Is The Best Idea?

    I love eggs for breakfast, simply because these make protein-rich, nutrition-dense easy breakfast recipes. Eggs are also a great source of minerals like selenium vitamin E etc. That makes these a perfect breakfast to start the day. 

    These Egg Paratha Are

    • Crispy, Flaky, Scrumptious, nutritious and absolutely delicious.

    The Perfect Dish for Egg Lovers, this Egg Paratha recipe is different from other stuffed parathas. Crispy, flaky, nutritious and absolutely delicious, we enjoy these parathas for breakfast, lunch or dinner. 

    How to Make Perfect Egg Paratha

    Egg filling is the core of this egg paratha. You can add flavours of your choice. To make the paratha, I add classic Indian omelette egg stuffing. You can add your favourite spices and create your own versions. 

    You can also make Egg cheese paratha by adding cheese to Egg stuffing.

    Ingredients for Egg Paratha

    For Flatbread - Aata ( wholewheat flour) Salt, Water

    Eggs - I prefer to use free-range organic eggs, these taste better and are antibiotic-free. you can use what you regularly use.  

    Vegetables - Onions, green chillies, coriander

    Seasoning - Salt and Red chilli powder

    Fats - Ghee, you can use oil if you wish to. 

    Stepwise Making Of Egg Paratha

    For making Egg Paratha first thing you need to do is make dough for flatbread or paratha.

    In a mixing bowl, add flour, mix in salt and oil, Rub everything well and mix it evenly.

    With warm water and knead the mixture into a smooth dough. Knead well.

    Divide the dough into 7 parts and make balls out of it.

    Next is Making and shaping the Paratha

    • Roll out the one dough ball by dusting it with dry flour if required. 
    • Apply ghee and spread it.  
    • Again sprinkle some flour on the ghee.

    To shape paratha and make a pocket for egg stuffing you need to fold it in the way I have shown in the stepwise pictures below.

    Make square paratha by rolling it as shown in the picture below in cooking paratha. Repeat the process with the remaining dough balls.

    To Make Egg Filling for Paratha

    • For making stuffing break the egg, add chopped onions, green chillis, coriander leaves, red chilli powder and salt. Mix well and keep aside.

    To cook Egg Paratha

    • Place the rolled paratha square on a hot tawa, and let it cook for 1-2 minutes on medium on both sides. Once it starts to puff up switch off the heat.
    • Make a slit in the side where paratha is joined from the seams.
    Technique of Stuffing the egg filling in paratha

    Tilt the paratha and pour ¼th egg mixture into the paratha pocket.

    Carefully slid back paratha onto tawa or griddle once again to cook it. Switch on the heat and allow to cook on slow heat for the egg mixture to cook completely from inside.

    Apply ghee and then flip it over and cook till golden brown and crisp from both sides.

    Turn up the heat and continue cooking the paratha until it fluffs up and turns crisp brown.

    Cut into 4 pieces and serve hot with a cup of masala chai for breakfast or snack.

    Recipe Notes and Tips to make Best Egg Paratha

    • As I said earlier one of the most commonly faced problems while cooking any stuffed paratha is even spread of the filling. It so happens that the filling moves to the corner and there is no filling left in the centre. 
    • Cook paratha on slow to medium heat so that the liquid egg filling inside the paratha is cooked completely and evenly.
    • Keep paratha rotating while cooking it so that the surface is cooked evenly. 
    • You can use a lesser amount of ghee for cooking this anda paratha if you like that.

    • There are many ways to prepare egg paratha. In some egg mixture is layered in two layers of flatbread.
    • Some spread the egg mixture on a simple paratha and fold it in half which is okay if you don't have time. It mostly tastes like an omelette folded into a paratha.
    • To make the best and most authentic tasting egg paratha, a good amount of egg mixture is spooned in an envelope, like I shown above and cook it.
    • This is Mughlai style it is made in envelop style or lifafa style and it makes a lot of difference in taste and texture of anda paratha.

    Ingredients

    • 1.5 Cups whole wheat flour
    • A pinch of salt
    • 1 tablespoon oil
    • 3 Eggs
    • ¼ cup onions chopped
    • 1 green chilli chopped
    • ½ teaspoon Salt to taste

    • Place the rolled paratha square on a hot tawa, and let it cook for 1-2 minutes on medium on both sides. Once it starts to puff up switch off the heat.

    • Carefully slid back paratha into horizontal position once again to cook it. Switch on the heat and allow to cook on slow heat for egg mixture to cook completely from inside.
    • Apply ghee and then flip it over and cook till golden brown and crisp from both sides.
    • Turn up the heat and continue cooking the paratha until it fluffs up and turns crisp brown.
    • Cut into 4 pieces and serve hot with a cup of masala chai for breakfast or snack.
