    Ingredients For Ejjeh

    The beauty of Ejjeh lies in its simplicity. The ingredients are easy to find and the dish is a breeze to prepare. Here's what you'll need:

    • Eggs: Use fresh free range eggs for better taste
    • Seasoning: Salt &  pepper
    • Herbs and Aromatics: fresh cilantro, green onions, fresh mint, finely chopped
    • 7-spice seasoning is also added I did not have it so I skipped. But if you have it or make it at home definitely use that it adds a lot of taste.
    • Extra virgin olive oil

    • Use a non-stick frying pan for cooking the omelette. It will prevent the egg mixture from sticking to the pan and avoid breakage during flipping.
    • Let the skillet get hot before cooking the omelette. Adding the egg mixture to a cold skillet may make the omelette burn on the outside while remaining undercooked in the center.

    What To Serve with Ejjeh

    Ingredients

    • 2 eggs
    • ¼ teaspoon salt
    • ½ teaspoon pepper
    • 2 tablespoon fresh cilantro (finely chopped)
    • 1 green onions finely chopped
    • 1 tablespoons fresh mint finely chopped
    • 1 teaspoon olive oil

    Instructions

    • In a large bowl, whisk two eggs.
    • Fold in the cilantro, green onions, and mint. salt, and pepper and whisk until well combined.
    • Heat 1 teaspoon olive oil in a non-stick skillet over medium heat.
    • Pour the omelette mixture into the heated skillet.
    • Cook until the eggs are set and golden brown, about 2-3 minutes,
    • Place a spatula under the omelette, fold over in half and transfer to a serving platter.
    • Serve the Ejjeh immediately on its own or with yogurt and pita bread.

    Notes

    Storage Tips: This omelette is best enjoyed fresh but if you have leftovers, store them in an airtight container in the fridge for up to 3 days.
