Samosa is one of the best Indian snack ever. There are many methods and types of samosa. In this post I a sharing how to make samosa with samosa patti also known as samosa sheets.
What Is Samosa?
Essentially samosa is a deep fried pastry filled with Spiced mashed potatoes. It is served with tangy spicy green chutney and sweet and sour tamarind chutney. It's Indian snack and street food that is love at first bite!
I am taking you through step by step method of How to make samosa with samosa Patti or samosa sheet, and of course, Aloo/potato stuffing for samosa.
Nothing compares to punjabi samosa recipe from scratch. Making samosa pastry dough, spicy stuffing and deep fried goodness. But let's be real It takes time! So, often times I make samosa with readymade samosa sheets/ samosa patti.
If you want to eat homemade samosa and want an easy samosa recipe that takes less time. You can make Punjabi samosa at home with Samosa Patti or samosa pastry sheet.

Punjabi samosa Stuffing
Samosa stuffing is an important part of making samosa. Punjabi samosa filling is made with aloo, matar and simple spices that are usually available in the kitchen.
No onion or garlic is used in authentic Punjabi samosa filling. But if you like the taste of garlic or onion you can add them in samosa filling. You can make the aloo stuffing as spicy as you want. I like to add small cubes of paneer sometimes. You can add paneer in the filling if you like it.
Here's How to Make Samosa Filling
- Heat oil or ghee in the pan.
- Add cumin seeds, chopped ginger, green chilli and coriender. Stir fry for a minute and add a tablespoon of water if it starts to burn.
- Add coriander powder and panipuri masala to the pan, stir to mix it.
- Season it with salt and red chilli and add boiled potatoes. Mix it well and keep this filling aside to cool.
- When filling is cold, place 1 big spoon of samosa filling on to a samosa sheet.
- Fold the samosa sheets as shown in the samosa folding video and prepare all the samosa likewise.
Can you make Baked Samosa made using samosa sheets?
Traditional recipe of samosa is deep fried. But if you want you can easily bake these samosa you are making with samosa sheets. Baked patti samosa turn out crispier.
You can check my Baked samosa recipe, that I made from scratch. One thing I must admit here is Baked samosa still comes out slightly dryer than deep fried samosa. But saves a lot of calories 🙂
Can You Make Samosa in Air Fryer?
Air fryer has made life so much easier and guilt-free for us food lovers. You can definitely make samosa in Air fryer. As you can see in the samosa picture below. The crust is slightly different from the deep fried samosa in the picture above. But the air fryer samosa tastes absolutely yummy too. Perfect crispy crust and the Punjabi aloo filling! Best of both the words.
How to Make Samosa in Advance
You can make samosa in advance and refrigerate them. You can make the samosa recipe till folding the samosa and refrigerate them. Now the question is till how long these samosas last. You can store samosa in the freezer for up to 6 weeks and in the refrigerator for up to 6-8 hours.
If you make small samosa, you can serve them as appetisers or finger snack. These are called cocktail samosa. You can serve the samosa with green chutney and sweet tamarind chutney. Samosa with tomato ketchup or Red chilli sauce is not bad either if you are feeling lazy.
How To Serve Samosa
Samosa can be served in a variety of ways the most popular way is samosa with green chutney or Sweet tamarind Chutney. Another delicious combination is as Samosa chole combination.
You can also make a samosa chaat and serve crushed samosa topped with whipped yogurt, sweet tamarind chutney, green chutney and spices like chilli powder, chaat masala, roasted cumin powder etc.

Punjabi Samosa with samosa patti Pastry Sheet
Ingredients
- 300 g Potatoes boiled
- 1 tablespoon Chopped ginger
- 1 green chillies Chopped
- 2 tablespoon coriander seed powder
- 2 tablespoon masala / amchoor mango powder panipuri powder
- 1 teaspoon red chilli powder
- to taste salt
- 3 - 4 tablespoon coriander Chopped
- 1 cup Peas frozen/ blanched
- 1 teaspoon cumin
- 8 samosa sheet
Instructions
Punjabi Samosa Aloo Filling
- To make samosa filling start by heating oil in the pan.
- Add cumin seeds, chopped ginger, green chilli and coriander. Stir fry for a minute and add a tablespoon of water if it starts to burn.
- Now add coriander powder and pani puri masala to the pan, stir to mix it.
- Season it with salt and red chilli and add boiled potatoes. Mix it well and keep this filling aside to cool.
- When filling is cold, place 1 big spoon of aloo filling on to a samosa sheet.
- Fold the samosa sheets as shown in the samosa folding video and prepare all the samosa likewise.
Frying Samosa in Oil
- Heat Oil for deep frying in the pan and allow it to come to smoke point.
- Lower the heat and after 2 minutes drop prepared samosa in hot oil. On low heat deep fry samosa till golden brown.

Notes
- If you don't have slim fry function mode in your microwave you can use traditional air fryer ( I don't use one because my microwave has all these functions and I unnecessarily don't want to clutter my previous counter space)
- I mostly believe in keeping one gadget with multifunctions , it may come little expensive but if you put together the amount you pay for many different gadgets it is still much less and the you have less cluttered counter 🙂

When I lived in Bahrain we used to get Sambusa from a little stand across the street from where we lived. I’m wondering if these are the same thing?

Yes they are similar, while the pastry covering is same but stuffing may change as Arabic Sambusa usually have meat filling. This is vegetarian filling.
