You only need 2 ingredients: Pure Cylon Cinnamon and Water.
- In a saucepan, combine the water and cinnamon stick. Use one cinnamon stick per cup. Cover the pan with the lid so that water and oils from cinnamon doesn’t evaporate.
- Bring this mixture to a slow simmer and gently simmer for 10 minutes.
- Switch off the heat, let the pot remain covered let it steep for 12 minutes. Cinnamon will keep releasing it’s flavours while steeping and cooling.

- Ceylon cinnamon has a light brown colour, have multiple thin layers that are swirled inside. Ceylon cinnamon is slightly more expensive than cassia cinnamon. In the container, it has a very mild flavour but once you add it to any dish its aroma is irresistible and flavours shine through.
- Cassia Cinnamon: This is a common variety easily available in grocery stores. With their dark colour and thick single sheet, these look better than true cinnamon or Ceylon cinnamon. Cassia cinnamon has a strong flavour but is not as healthy as Ceylon cinnamon is. Long term use in making cinnamon tea with cassia can affect the liver adversely.
