Also, If you love the combination of bread and eggs the bread omelette sandwich can easily be your new favorite breakfast, if it was not already 🙂

The way you are liking my my Instagram series #MTCchaiNashta tells me that like me, many of you are in need for quick and tasty breakfast ideas. So here’s another one, Bread Omelette sandwich. I know while this may not be a gourmet fare but it’s wholesome, quick and easy Indian breakfast for many.
When I am talking about simplicity and ease of making dishes, my mind always takes me to those early days of my married life when as a very young Air Force wife I used to struggle even to make a good chai let alone a breakfast. This was one of few breakfasts my husband knew how to make, and relentlessly kept teaching me how to make a perfect Omelette (Which I still have to perfect BTW :), Now I really have lost hope, that I will ever be able to do it in future). But the sunny boy has learned the art and now he is best omelette maker in the home. I make a decent job of it but still I had to concede that mine does not match upto his Indian Omelette standards.
So, technically that makes this bread omelette sandwich as one of those easy breakfasts recipes that is must in your breakfast repertoire. And the best thing is you really don’t require too many ingredients for making this bread and omelette sandwich. If you love street food and try it quite often you already know how many fans this simple bread, omelette sandwich and so many variations in terms of other veggie fillings and spices used. But What makes it stand out always is the simplicity of the dish.
As I said bread omelette sandwich is very quick to put together, and can be customised to your own taste preference. You can use veggie omelette, Fritatta (if you like more eggs) or Spicy Indian cheese omelette with lots of cheese, green chilli and chopped onion. You can add cucumbers and tomatoes along with Omelette as filling and green chutney or ketchup will spice it up little notch.
If you have kids at home, the bread omelette sandwich can be a great choice to pack in the lunch box and comes very handy as an evening snack.
At our home I make it with Whole wheat bread as usual because white bread is something that I avoid. I add greens like lettuce, rocket leaves, and baby spinach along with Cheddar cheese slice and thick Indian style spicy omelette. I skip green chutney or ketchup as I feel that makes it soggy. I prefer to serve ketchup or chutney as an accompaniment for the sandwiches.
Try this if you are not already making this and I promise this will be one of your easy go to recipe as far as Nastha (breakfast) is concerned or even Chai Nashta (Evening high tea).

- 4 slice cheese I used Cheddar Cheese
- 12 Tomato slice
- For Omelet!
- 4 egg
- 1 onion chopped finely
- 2 green chilli chopped finely
- salt to taste
- 1 tsp red chilli
- 1 tbsp Oil
Mix all the ingredients for omelet in a bowl other than oil.
Grease a non stick pan or cast iron pan , pour egg mix over it and cook till set and light brown from one side, flip over and cook till light brown from other side as well.
Remove it to a plate and make 4 omelette .
Now take your bread slice. apply thin layer of butter on both sides, make a layer of sliced tomatoes on 4 breads, follow it up with cheese slices one on each bread. Finally top with Omelette and your choice of greens, I used rocket leaves you can use lettuce or baby spinach too.
Top with another bread slice and press lightly when trimming the sides of bread.
Serve with garam garam cup of adrak chai (Hot ginger tea)
