    Cowboy Caviar - Texas Caviar

    Cowboy caviar is fresh, vibrant, fully loaded beans and summer vegetables salad tossed in a tangy and sweet lime dressing! A right kick of spices makes it an ideal party dip or a go to healthy meal prep option. Call it salsa, Texas Caviar, bean salad or cowboy caviar this is perfect Southwestern delight.

    No more boring salad for you when you can make this Cowboy bean salad. Call it cowboy bean salad or You can put together this simple fresh vegetarian summer salad in 15 minutes!

    WHAT IS COWBOY CAVIAR?

    Cowboy caviar is also known as Texas caviar or Mexican caviar. You can serve it as salsa or as bean salad. It's mainly a combination of two beans. black beans and black eyes beans along with colourful summer vegetables.

    But I make it with kidney beans all the times. I have always loved bean salad or cooked beans in any form. So when I first saw this on Pinterest I was immediately drawn towards it.

    There it was staring at me with all my favorite ingredients in one bowl and the word COWBOY added to that made it sound somewhat fancier.

    Serve It as Salad or Salsa 

    This salad is a version of Cowboy caviar, a bean salsa dish  that was invented in Texas. You can serve it as a summery dip that looks like a chunky salsa or even Pico de Gallo. Or as a Summer salad for the lunch or light meal. One thing is sure though! When you taste you are almost in bliss I know because I was hooked for life. 

    The best thing is it is so versatile that you can serve it as bean salad, as a dip with chips, as a side, make a taco stuffing, top it on nachos or fill it in a quesadilla.

    There are so many possibilities with this fresh and juicy mix of fresh tomatoes, sweet and crispy peppers, with the kick of southwestern spices and that lime dressing. 

    I am not exaggerating this almost tastes like heaven. Try it once I am pretty sure this will be your favorite summery dip for potlucks, picnics, work lunches, or meal preps. 

    As usual, this easy recipe This easy recipe for Cowboy Caviar is highly adaptable so I customised it for our taste. The original recipe calls for a lot of sugar but I used just a small fraction and also made little more variations.  So here I am sharing it with you all a slightly healthier variation of bean cavier.

    Ingredients You Will Need

    Simple Cowboy Bean Salad

    Corn, black beans or kidney beans or any of your favorite beans, 

    Veggies- red bell pepper, baby tomatoes, Avocado, Lime, cilantro

    Seasoning - Chipotle or Paprika, Salt, Extra virgin Olive oil black pepper

    I used freshly boiled corn and beans but canned beans and corn work great too. 

    Step by Step Recipe- Cowboy Beans Salad

    In a jar pour olive oil, lime juice, black pepper, salt, paprika or chipotle, and sugar. Close the lid of the jar and shake well. (picture 1,2)

    In a mixing bowl add corn, kidney beans, black eyed beans (if using) tomatoes, baby tomatoes, avocado, and cilantro. Then pour the lime olive oil vinaigrette dressing we made earlier in the bowl. (picture 3,4,5)

    Mix everything well with a spoon. Cowboy bean salad is ready to serve. (picture 6)

    Recipe Notes and Tips 

    • You can make the lime dressing in advance that keeps well for 10-15 days in the fridge.
    • You can use fresh boiled corn and beans or canned corn and beans as per convenience or choice.
    • For meal prep combine everything and store the dressing separately if you plan to keep it for more than 3 days.
    • You can make this and store it in the fridge for up to 3 days.
    • You can add lime juice to refresh it if you have stored it in the fridge.

    How to Eat Cowboy caviar

    This is a delicious meal by itself for a light meal. You can serve cowboy caviar as a dip, as a topping/stuffing for tacos, buns etc, in place of salsa. It pairs well with anything with Southern American flavors or Mexican dishes. 

    Chop it finer than this and make a salsa, scoop it with chips. I serve it  times  a quesadilla filling, or Enchiladas or burritos all the times!

    How long You can store this to keep fresh?

    This is one of those robust salads that stays good for the next 3-4 days in a fridge. Even avocado remains fresh and green because lime dressing coats it nicely and there is no browning from oxidation.

    So I meal prep it all the time and when it is time to eat just refresh it with a squeeze of fresh lime. It tastes amazing with chips or straight from the spoon.  

    How To Make cowboy Caviar For Meal Prep

    All you need to do is Chop red peppers, cut baby tomatoes into quarters, Chop cilantro, In a meal prep container add corn, beans, chopped veggies and keep them in a sealed container. 

    To mix dressing in a small bottle mix, extra virgin olive oil, lime juice, chipotle, salt, sugar, black pepper and shake it well to make the lime dressing.

    Keep both of these, the veggie container and dressing in the fridge till you are ready to enjoy.

    Ingredients

    • 1 cup Corn frozen or fresh
    • 1 cup Kidney beans
    • ½ cup Cherry Tomatoes (quartered)
    • ÂĽ cup Avocado
    • 1 tablespoon Lime
    • â…• cup Cilantro coriander (chopped)
    • 1 teaspoon Paprika
    • ½ teaspoon Salt
    • 2 tablespoon Olive Oil Extra virgin
    • ½ teaspoon Black Pepper
    • ½ Red Bell Pepper (chopped)

    Instructions

    • First Start by making the lime dressing. For that in a small bottle add extra virgin olive oil, lime juice, salt, sugar, chipotle, black pepper.
    • Tighten the lid on the bottle and shake it well to combined emulsify to make lime salad dressing. Keep this aside.
    • In a mixing bowl add corn, kidney beans, or any other beans that you are using, chopped bell peppers, quartered tomatoes, and chopped avocado.
    • Now, add chopped cilantro and pour the lime dressing in the mix. Mix everything well with a spoon.
    • You can add chopped onions if you wish. Use them as a garnish that way they remain crunchy and taste better. You can also add them together with the rest of the ingredients and serve.
