Classic Egg Salad Tea Sandwich

Back in time, as a Military wife, coffee mornings, welfare meets and ladies clubs were part of our life. And none of these events were complete without a cup of tea and a variation of dainty tea sandwich and a slice of soft pillowy cake from officer’s mess.

Birthday parties of the kids or late night bouncing from bachelors tea sandwich were a part of every social event. Now after almost a decade of living life outside Armed force campus one thing that I still follow is making a variety of tea sandwiches.

What is Tea Sandwich

What makes Tea sandwiches distinct from other sandwiches is tea sandwiches are are usually cut in quarters or fingers. The filling is simple and crust is always cut off. Unlike other sandwiches that maybe loaded with filling these are delicate and dainty sandwich perfect to nibble with tea.

Ingredients For Sandwich

  1. Bread: Use Soft white or brown sandwich bread only. Stronger breads are not used for this. I use crustless jumbo sandwich bread for this. If you use regular sandwich bread make sure to trim the edges and remove the crust.
  2. Eggs: I use Free range eggs or organic eggs for making all my egg dishes.
  3. Mayonnaise: Homemade mayo is best. But store bought can be used for convenience.
  4. Mustard: Preferably use English mustard but I had dijon mustard so I used that. Dijon mustard has more intense flavour so I used lesser quantity.
  5. Salt: Sea salt or regular salt as per your choice
  6. Black Pepper: Freshly cracked black pepper is a must
  7. Jalapeno: In the classic egg sandwich jalapeño is not added. But if you are like me I love slight kick in all my food so I added sliced jalapeño.

How to Make

In a bowl combine mayonnaise, mustard, salt and black pepper.

Hard boil eggs and chop them. Here’s how to make perfectly boil eggs.

Mix chopped eggs with prepared mayo mix and combine well.

Now spread the eggs salad mixture evenly on one slice of bread.

Cover this with another slice of bread press it gently to seal the filling.

Cut it into smaller triangles or finger size sandwiches.

Serve with a cup of tea.

Which bread to use for making Tea Sandwich

Use soft white sandwich bread or brown sandwich bread for making tea sandwich. Make sure to remove the crust of bread.

How to Prevent Sandwich from Drying out?

After assembling and preparing the tea sandwich cover your sandwiches in sandwich wrap or parchment paper to prevent the sandwich from drying out.

How to Prevent Sandwich from getting soggy?

If you want to make the sandwiches ahead of time make sure to apply a thin layer of butter inside the sandwich before placing the filling.

How to store sandwiches?

To store them line a glass container with parchment paper or paper wrap and place the sandwiches in the box. Cover with a another paper wrap and close with a lid.

  • 2 Eggs
  • 2 tablespoons Mayonnaise
